A Comfort Food Bento

Good Morning!

DH played paint ball with his students yesterday.  He came home tired and covered in paint.  It was too funny to see what his students had done to him.  Tales of battle and acts of valor made dinner quite fun last night.  I was glad to be able to send him to school today with a comforting bento that will fill him up and help him to forget those sore muscles.  I am sure he's going to be uncomfortable today.

My youngest daughter helped me to make this bento and is very proud to be helping take care of daddy.  She was so excited to be able to assemble the lunch and even more excited to know I was posting pictures online.


Layer 1: Cucumber and tomato salad with homemade vinaigrette, Greek yogurt and blackberries, blueberries, and some raspberries, a single chocolate covered strawberry, and two fruit candies from Perugina.  Yummy!


Layer 2: This is the comfort food section of the bento.  It doesn't look like much but it is a rich, warming meal.  There is creamed spinach with 3 types of cheese in it, turkey meatloaf stuffed with goat cheese, and potato topped with butter and herbes de Provence.

I can't take credit for this meatloaf recipe.  It was supposed to be a stuffed burger but it was really moist.  My fix was to turn it into a meatloaf.  Here it is: Stuffed Turkey Burgers.  It came from a site I absolutely love: Once A Month Meals.  This site has menus for freezer cooking.  It is a great resource for bento stash items that I can keep in the freezer and pull out as needed.  I also love their menu planning system and have been known to cook ahead meals, especially when I know life is about to get really busy.  They even have baby and toddler menus - a wonderful thing.

Leftovers in a Bento - 2012

Happy New Year!!!!

My parents have just left to return home and I have a house FULL of leftovers.  What's a girl to do?!?!  BENTO!!!  :)

Let me introduce you to my new favorite appliance - the pie maker.  My mother and father bought this amazing appliance for me and it is no ordinary pie maker.  When first they discussed buying one, I suggested that there were cheaper ones out on the market but they did a lot of research.  The Breville Pie Maker is the best available and makes lovely 4 inch pies and quiches - perfect for lunch, breakfast, and well, eating anytime.  I have had hours of fun with it already.

This bento is my first of the new year and it seemed appropriate to use leftovers in a pie.  Mom, this bento is for you!


This is a single layer bento consisting of homemade turkey pot pie and salad.  It is super simple and (I think) quite cute!   How did I make the pot pie?  Well, I took pie crust, put it into the pie maker and shaped it to the container.  I added some leftover mashed potatoes (about 2 tsp of it) and then a few teaspoons of turkey in gravy (also leftover).  I added a few peas and diced carrots.  Viola!  Turkey pot pie is easy as, well, pie!  Thanks Mom for cooking up a storm.  I am packaging leftovers to make meals for when we get home from Russia with the kids.

That reminds me, dear readers, DH and I will be going to Russia to bring home our three kids this month.  Bentos will likely be more kid oriented in February.  We are looking forward to a very big change in our lives - a wonderful change.

Soup Leftovers in a Bento

We had soup for dinner and I needed to use the leftovers . . .   I looked at different sized ramekins to place inside the bento covered with plastic wrap. - This didn't work.  I didn't want to make anything new and we had precious little in terms of leftovers.  How do you remake soup?  Well, I turned it into a pasta sauce.  Take a look!


Layer 1: Appetizers of fresh veggies, a prosciutto and mozzarella roll, and some gold fish.  Dessert is mini grapes (so cute!), orange slices, and mini Reece's PB cups. 


Layer 2:  Where's the soup?  Well, I made some ramen noodles and used the soup (veggies and all) as a sauce.  I added a few turkey terrine balls from the freezer and some carrots, green beans, cauliflower, and dried cranberries to round out the meal.

The only problem with using the soup this way: I still have leftover soup.  How else can I remake it???

A Bento for Lovers

My daughter is going on a picnic with her boyfriend tomorrow and wanted me to pack her a special bento lunch.  It's actually quite touching that she asked since she's 17 and could certainly have packed something herself.  I think she wanted to see what I would do.  :)  Since she's leaving the house before 8 am, I wanted to make sure it was done early, so here it is - 12 hours ahead of schedule!

This is a single layer bento meant to be shared.  I could have made two separate bentos but that just didn't make sense.  There's a lot of food here and only one container for my daughter to worry about bringing home. 


On the left we have piccolini pasta tossed with butter, olive oil, rosemary, garlic, salt and pepper.  To that I added carrots, zucchini, tomatoes, and yellow pepper.  I put a terrine de volaille on top as the protein.  Then I added more tomatoes, yellow peppers and chives.  I decorated it with two hearts cut from red peppers and sprinkled on some Parmesan cheese.

On the right is dessert: two mini cupcakes (yellow cake) topped with a chocolate ganache and some frozen strawberries.

Terrine de Volaille
Here's the recipe for the turkey terrine I made tonight.  By the way, this was dinner and I put the leftovers into my daughter's bento.  I actually made 3 lbs of turkey and will be making mini meatballs with the rest and freezing them for later lunches.

Ingredients:
1 lb of ground turkey or chicken  (I like to buy some white meat and dark meat and blend them.)
0.25 lb of ground pork (This can be omitted - I didn't put it in today.)
1 egg
1 shallot
1 onion
0.5 cups of white wine, sherry, or cognac
thyme, parsley, salt, pepper

Finely dice the onion and put it in a bowl with the turkey and pork. Add the egg, white wine, and herbs &spices. Combine like meatloaf. But into a loaf pan and bake at 400 for 25 minutes or until cooked through but still moist.
